An emblematic place of popular Paris, nestled in the shadow of the Saint-Vincent de Paul church, just steps from the Gare du Nord, reflecting the history of Parisian bistronomy. It was born in 1939 under the leadership of chef Michel Malapris. It was taken over in 1975 by another Michel, Michel Tounissoux, then by Thierry Breton in 1995. Until 2015 when Japanese chef Masahiro Kawai, known as "Masa," took over the place. Fish soup, chorizo, croutons. Sobrasada, fried egg, quince purée. Wild abalone from Trégor, garlic and parsley. Kig ha farz. Sweetbreads with truffles. Paris-Brest. The spirit of the house has remained unchanged since its creation. A generous, simmered, warm, local, and sharing cuisine – a heritage claimed by chef Masa. "I would like to recreate my grandmother's cooking, who simmered dishes in her village in Niigata," a province in northern Japan. However, it is only the spirit of a grandmother's cooking... because the cuisine here is faithful to the traditional French repertoire. Accompanied by a few Breton, Tokyoite, and Spanish dishes, in homage to the masters who trained him in Japan, Spain, and France. Masa also insisted on keeping a few Breton dishes from his predecessor Thierry Breton (from whom he still gets his bread) on the menu. Needless to say, the menu is well-stocked... Shredded crab, avocado, cucumber, lobster jelly. Veal blanquette, old-fashioned vegetables, pilaf rice. Royal hare, pan-fried foie gras, gnocchi. Prunes in red wine, weekend cake.
